12 ounces egg noodles
¼ cup plus 2 Tbs siggi’s 0% plain skyr
¼ cup Parmesan cheese, finely grated, plus more for serving
Salt and pepper, to taste
Prepare the egg noodles according to the directions on the package and reserve 1 cup of the pasta water before draining.
While the pasta is cooking, combine skyr with the Parmesan cheese in a large bowl. Add the cooked, drained pasta to the skyr mixture, along with a bit of the cooking liquid. Stir to combine with the skyr sauce, adding more cooking liquid as necessary to achieve desired consistency.
Season with salt and pepper to taste and serve with additional Parmesan cheese.
