16oz fettuccine pasta
1 avocado, peeled and pitted
½ cup siggi’s plain 4% skyr
1/3 cup flat leaf parsley
¼ cup packed fresh basil leaves
3 green onions, chopped
2 tablespoons lime juice
2 tablespoons water
salt and pepper to taste
Cook pasta until according to the directions on the box.
Combine the avocado, skyr, herbs, green onions, lime juice and water in a blender or food processor and blend until smooth. Season the skyr sauce with salt and pepper to taste.
Drain the cooked pasta and return to the pot. Stir in the sauce and mix until thoroughly combined. Serve immediately.
