spiced toast • toast topped with a creamy pumpkin spice yogurt spread, made with siggi’s yogurt, bringing all the cozy flavors together.

ingredients

4 slices of sourdough bread

16oz of siggi’s 1.5% pumpkin & spice skyr

4 purple carrots sliced in half

½ cup coconut palm sugar

2 tbsp butter

1 cup arugula

2 tbsp olive oil

2 tsp juice from a lemon

salt and pepper

Crushed pistachios

spice up your toast with pumpkin spice yoast!

Bring a small pot of water to a boil, then blanch the carrots for 2 minutes. Remove the carrots and dump out any remaining water. Add the pot back over medium-low heat with butter and coconut palm sugar stirring to combine. Toss the carrots in the mixture over low heat with a pinch of salt until ready to serve.

Meanwhile, toast the bread, crush pistachios with the back of a knife and toss arugula with olive oil, lemon juice, salt and pepper.

Add the pumpkin spice yogurt over the toast with arugula, carrots, pistachios and finishing salt.
