Banana Skillet Cake

1/2 stick butter
2-3 bananas, smashed (about 3/4 cup)
1/4 cup dark brown sugar
1 tsp vanilla extract
1 large egg, room temperature
1/4 cup coconut oil
1 cup (5.3oz cup) coconut skyr (or of your choice)
1/2 tsp ground cinnamon
1 1/2 cup all purpose flour
1/2 cup shredded coconut
1 tsp baking soda
1/2 tsp baking powder
1/2 cup dark chocolate chips
1/2 tsp salt
Melt the butter in a 10″ oven safe skillet on the stove top. Remove from heat and in the same skillet, add the sugar, vanilla, egg, cinnamon, mashed bananas, siggi’s skyr, & salt. Mix until combined.
Add the baking soda, baking powder and flour. Slowly fold in coconut oil, shredded coconut and chocolate until well combined.
Bake in the oven for about 45-50 minutes at 350* or until done.
Note: If you use a larger skillet, adjust cooking time to 30-45 minutes or until done.
