1/2 cup of siggi’s 2% coconut yogurt
1/2 tsp ground cumin
1/2 tsp ground coriander
3/4 tsp salt
1/4 tsp cayenne pepper
1 Tbsp fresh ginger, minced
2 cloves garlic, minced
1 ½ Tbsp olive oil
1 lb boneless, skinless chicken breast
Turn oven to broil and move oven rack so it is 6 inches away from broiler element.
Combine all ingredients except the chicken in a large bowl and mix thoroughly to create a marinade.
Coat each piece of chicken in the marinade then place on a broiling pan. Tip: for better flavor, marinade your chicken overnight.
Broil chicken for 6-8 minutes. Once it has started to brown, flip the chicken over and broil for another 6-8 minutes until cooked through.
Serve with flatbread and fresh vegetables.
